  • soils Sourced from 60 year-old ungrafted vines growing in sandy soils containing ancient river pebbles.
  • vinification Temperature-controlled alcoholic fermentation at 28ºC. In contact with the skins for 24 days in a 120-hectolitre French oak vat (Barrel-box). The malolactic fermentation is carried out in new French oak barrels (225 litres) over a period of 2 months.
  • ageing 20 months in 100% new French oak barrels with medium toast charring, sourced from different coopers.
  • serving temperature 14ºC - 16ºC
  • capacity 0,75 cl
sensory analysis
  • Colour: a very deep colour of deep black-garnet and violet hues with dark. Black cherry and vermilion tones at the surface.
  • First there are balsamic and resin notes together with oily hints of tar and ink. On swirling the glass, the wine opens out to reveal smoky notes of herbs and bitter cocoa. Finally the fruit comes through –wild blackberries together with liquorice and sloe berries.
  • Paladate: the first impression on the palate is softness, sweetness and tenderness. Gradually, the tannins come to the fore with resinous, spicy characters together with hints of macerated black fruits with spices (red pepper) and unroasted coffee. Very good length underpinned by fresh acidity.
