  • soils Sourced from ungrafted vines growing in gravelly soils, which are poor in organic matter, lying on a bed of clay with some limestone content.
  • vinification A pre-fermentation cold soak for 36 hours. Alcoholic fermentation at 28°C in stainless steel vats for 20 days in contact with the skins. Malolactic fermentation in oak vats (Barrel-box).
  • ageing 12 months in new oak barrels, 50% of which are American and 50% French.

sensory analysis
  • Colour: dark cherry in the core with medium depth, displaying very bright purple-garnet glints.
  • Nose: balsamic and sweet cocoa notes are provided by French oak barrels, while American oak brings hints of patisserie; most especially here there is vanilla, coconut and roasted coffee beans, typical of barrels having been charred at the time of fabrication.
  • Paladate: the French barrels bring a delicious mouth-feel of silky tannins while the American oak a more resinous sensation with more rustic tannins, which will soften as the wine ages in bottle over time. A well-structured wine.
